Cut between the rib bones after baking this little roast for 1 hour at 350 degrees, uncovered, temp at 120-140 degrees, then let rest for 15 minutes. The Prime rib of Pork some will call it, I call it devine flavor. Any rub or marinade is prefect with this little roast for 3-5 people. Hard to keep left overs with this one.
