2 thick cut, boneless pork chops, wrapped in hickory smoked bacon are great! Each is 8 oz or better in weight. Grills perfectly with indirect heat for 15 minutes, 25 minutes total. Berkshire chops are the best for grilling because of the natural intermuscular fat inside the loineye.
Here is a great method for perfect chops:
Get your grill hot!
Place chops over flame for 2-3 minutes each side, this sears them.
Turn heat down to low (internal grill temp to 300 degrees)
Place chops off to the side of flame for 15 minutes.
Temp them at 145 degrees, plate them, do NOT cover them. Let them rest for 10 minutes. and WALA! they are ready when you are.
